The British game season is one of the most anticipated moments on our culinary calendar, and Rabbit British Bistro is marking it in style. From 13th August, we're serving the season's first grouse as a special on our à la carte menu, prepared the Rabbit way to celebrate one of Britain's great food traditions.
Grouse is a truly wild bird — shot on the Yorkshire moors, never farmed, never reared — and its arrival each August signals the true start of autumn eating in London. This year, just 120 birds are arriving across all our restaurants for opening week, so availability at our Chelsea dining room will be genuinely limited.
We're serving Young Yorkshire Grouse with elderberries, cauliflower purée and crispy bacon, finished with wood sorrel — a dish built to let the richness of the bird shine, balanced by sweetness, earthiness and a sharp citrus lift. It's a true celebration of British produce, seasonality and the ingredients that define our philosophy.
